Sweet Potato Shephard’s Pie

Ingredients
1/2tbsp olive oil
1 onion diced
2 cloves garlic chopped
1 chilli
1 red capsicum diced
2 carrots diced
4 mushrooms sliced
1kg of sweet potato
1kg lamb mince
2 tbsp Worcestershire sauce
1tsp Tabasco sauce
2 teaspoons beef stock
1/2 cup water

Method
Boil the sweet potato and mash with some nutmeg and salt and pepper.

Heat olive oil in a pan and add onion, garlic and chilli.  Add mince with salt and pepper and cook till mince is brown.  Add beef stock and water and stir.  Add capsicum, carrots and mushroom and sauces, stir and turn the heat to low and simmer for about 40 minutes. 

Put mince in the bottom of a large baking dish, spoon on the sweet potato mash – and put in a hot oven until the potato crisps up.

Great for dinners – just pop it in the microwave.
