DELICOUS Chicken and Sausage Paella

Ingredients
1.5 cups long grain white or brown rice
3.5 -4 cups low salt vegetable stock
Splash of olive oil
1 chicken breast finely diced
2 sausages – I used a country style pork
1 tin of tomatoes
2 tablespoons tomato paste
1/2 tsp paprika
1/2 tsp turmeric
1/2 brown onion diced
2 cloves garlic finely chopped
1/2 capsicum finely diced
1/2 zucchini finely diced
1 carrot finely diced
1/2 cup peas
2 tablespoons mango chutney

Method
Cook the sausages, chop into small pieces and set aside.

In a large deep pan – heat the oil and cook the chicken until brown, add the onion, garlic, veggies (except peas) paprika and turmeric and cook until onion is soft.  Add the rice, tomato paste and chutney and make sure the rice is coated well.  Add the stock and tinned tomatoes and bring to the boil. Reduce the heat, put the lid on and cook for approx 30 mins or until all the liquid is gone.  Add the peas and sausage and voila.
