Harper loves this – for either a lunch or snacks. Sometimes I heat it up but she’ll eat it cold as well. (also great for mummy and daddy)
Ingredients
5 eggs
6 cherry tomatoes
1 mushroom
handful of baby spinach chopped
1/2 onion – diced
1/4 cup baby peas
1/2 cup grated cheddar cheese
1/2 tablespoon unsalted butter
Method
Beat the eggs then add all other ingredients (not the butter) and mix well
Melt the butter in a fry pan over a medium heat making sure to coat the pan in butter. Pour in the mixture. While it’s cooking – carefully make sure the sides can lift up as you go (see my highlight reel for example). Cook for about 5 minutes or until the underside is brown.
Place fry pan under the grill for about 3 minutes or until it’s nice and brown on top.
Flip out onto a chopping board, chop into slices and enjoy.
