Sourdough Pizza

Who doesn’t love pizza

Another possibility that is just sooooo divine! I mean – who doesn’t love pizza. Let along Sourdough Pizza.

Takeaway pizza is just a thing of the past – home made is where it’s at.

What’s the difference?

Over the last few years as my health journey continues the more home cooking I’ve done. When you start reading the labels of packets on food you buy you start to realise so much of it has preservatives and additives. We know a lot of these are not good for our health – gut health and long term health. A few here or there is fine – but the more we consume and when you realise how often it pops up in store bought food – the more motivation it gives me to bake and cook at home.

When Pizza popped up I was so excited. Most of the time pizza leaves me feeling bloated and yuk, mainly because it’s got a high glycemic index which doesn’t agree with me.

What’s in Pizza Dough – are they a healthy option?

Pizza bases are usually just flour, salt, and yeast. However when made with sourdough and left to ferment over a period of time – this releases the good bacteria that then lowers the GI and provides additional health benefits. Whether pizza is healthy or not – well health is a state – but high calorie or not depends on your toppings. When you make at home you get to choose what goes on it – which is the major difference when it comes to the health aspect.

RECIPE

These are super easy. You’ll need 10 minutes at the start – then it can be left until you’re ready to make your pizzas.

INGREDIENTS – BUNS

  • 2 cups sourdough, discard/unfed or half fed (500g)
  • 600g all purpose or pizza 00 flour
  • 300ml water plus extra in case
  • 2 tsp salt
  • 1 tsp instant yeast

METHOD

Mix all ingredients together then either using a stand mixer with a dough hook or your hand.  Knead for between 7-10 minutes until the dough cleans the side of the bowl or until its nice and smooth.  

Put it in an oiled bowl, cover and leave for up to 4 hours or until doubled in size. 

Pre heat your oven to 220 degrees while the dough is rising. 

Divide the mixture into 6 and flatten into disks.  Pop them on oiled trays or pizza trays, cover and leave for 15 minutes. Push the dough out to the sides of the pizza pan or into a rectangular shape.  Cover and leave for another 15 minutes.  Press them further out or until the size you want – you can then cover and leave until it’s risen as much as you want or use straight away.

Put the sauce on the bases (I like to make this from scratch as well) and pre cook them for 5 minutes before adding your toppings.

Add cheese first, then toppings of choice.  My faves are below.

  • Grilled chicken, Mushrooms, red onion, yellow capsicum
  • Grilled chicken, mushrooms, BBQ sauce, red onion, pineapple

Cook them in the hot oven for about 10-12 minutes until edges are nice and crispy. Serve straight away.

Don’t forget – cold pizza the next day is the best too!
