Pasta is something we have weekly. It’s a great source of carbohydrates, the kids love it and well – so do we.
WHATS THE DIFFERENCE
For the past year and a half I’ve been buying fresh pasta from a local company called Otway. A local Melbourne brand who’s pasta is delicious. Yes the price was way more than the dried pasta I was buying previously – but the health benefits and the amazing taste for me outweighed the cost.
Then I thought – nothing beats home made sourdough pasta right.
SOURDOUGHS ENDLESS OPPORTUNITIES
When I decided 2024 was the year to start making sourdough NEVER did I image all the other amazing things that I could do with it, and the list just keeps on growing. It can seem so overwhelming in your head at the start and before you’re ready to even fathom making what seems like complex items one must surely only have to buy from the supermarket. But once you realise the simplicity of it – you won’t stop. Not only that the reward from making your own food is priceless. Knowing you’re feeding your family the best quality produce, that you know where it’s come from and what’s in and then to top it off knowing that sourdough’s gut health benefits are awesome – it’s a no brainer. The benefits from using sourdough are huge too – low gi (slow release carbs) and AMAZING Gut health benefits from the fermentation process. Hello happy guts!
RECIPE
This is such as simple recipe – so get the kids involved. Also the sense of accomplishment when you serve your family home made pasta is awesome.
Recipe
- 3 eggs
- 40g bubbly sourdough starter
- 300g 00 or pasta flour
Method
Mix your starter and eggs together.
In a food processor add the flour and egg mixture. (If you don’t have food processor you can just bring this together with a wooden spoon then your hands)
Blitz it for 15 seconds. Pour it onto the counter top and bring it together in to a ball. Cover with a bowl for 10 minutes.
Knead the dough for 2 minutes with the heal of your hand (watch the reel HERE to see how I do it) until it’s nice and smooth.
Wrap it tightly in biodegradable plastic wrap and bench rest for 1-2 hours. You can now use it – or put it in the fridge for up to 12 hours until ready to use.
Remove from the fridge 30 minutes before use. Cut into 4 pieces and roll each out in to a disk shape.
Remove from the fridge 30 minutes before use. Cut into 4 pieces and roll each out in to a disk shape. Time to start rolling it out. I put it through the pasta roller twice on each setting up to 4. (1, 1, 2, ,2 etc) Then choose your favourite shape and cut the pasta.
ENJOY
