Ingredients
1 fillet of salmon
1 sweet potato (or normal potato you can do it with both)
1/4 cup full fat greek yoghurt
Basil
Olive oil
Grated cheddar cheese
Method
Pop salmon on a baking tray with a drizzle of olive oil – and put in the oven on 180 for 15 minutes.
Peal and chop the sweet potato into big chunk – drizzle with olive oil and put in a 180 degree oven for 20 minutes. Remove and smash into a bowl with a fork.
Put salmon, sweet potato, yoghurt, chopped basil and cheese in a bowl and mix well. Easily frozen and defrosted.
