Mushroom Risotto

Ingredients
100g chicken breast
1 onion – diced
1 cup aborio rice
1 cup mushrooms – diced
1/2 cup spinach – roughly chopped
1/2 cup grated cheddar cheese
5ml olive oil
Teaspoon of unsalted butter

Method
Slice the chicken breast horizontally and grill on a fry pan until cooked – chop finely once done – set aside.

Heat olive oil in a saucepan and add onion – stir until see through then add the rice and mix well. 

Slowly add water mixing continuously – once absorbed add little more – stirring and continue this process until rice is soft (can take up to 15mins). At the same time pop the butter in a fry pan with the mushrooms and cook for 3 minutes. Once the rice is almost done – add the mushrooms. 

Once the rice is nice and soft – take it off the heat – add cheese, spinach and chicken and mix well.

Add it to your Wean Meister freezer pods and freeze for up to 3 months. 

Microwave to defrost – make sure it’s heated all the way through. Can be reheated once the next day only. (nb: note rice needs to be piping hot when reheating)
