Cinnamon Fruit Sourdough

Is there anything better

Cinnamon fruit toast or in this case – cinnamon fruit sourdough. It’s warm, it’s cosy it’s like a warm hug in your mouth. With melted butter – it’s divine really.

Cinnamon fruit sourdough is a favourite in this house with a loaf getting devoured with a day or so – the kids LOVE it. Ok – so do I.

What’s the difference?

Over the last few years as my health journey continues the more home cooking I’ve done. When you start reading the labels of packets on food you buy you start to realise so much of it has preservatives and additives. We know a lot of these are not good for our health – gut health and long term health. A few here or there is fine – but the more we consume and when you realise how often it pops up in store bought food – the more motivation it gives me to bake and cook at home.

When you start looking at the back of packets you realise the ingredients list is abundant of things that aren’t great for us. As my journey goes on – I’m all about finding better ways to fuel our bodies without having to have that stuff too.

Home made sourdough Fruit vs supermarket

In the supermarket you will find things like stabilisers, colours, flavours, additives and other things to give them a longer shelf life – as well as things like vegetable oils – which just aren’t necessary. Not only that – because of the way it’s made the glycemic index of store bought fruit loaf is high – meaning it’s not going to keep you full for long, it will interrupt your gut health and will spike your blood sugar higher than we want.

My Sourdough version has the same ingredients as a normal loaf of sourdough with the benefits of honey and just plain of raisins or sultanas and cinnamon and mixed spice. That’s it.

RECIPE

There’s just 1 extra step compared to a normal loaf of sourdough but watch out. It will get devoured pretty quick.

INGREDIENTS

  • 100g active starter
  • 370ml tepid water
  • 430g white bread flour
  • 70g whole-wheat bread flour
  • 10g salt
  • 30g honey
  • 130g raisins or sultanas
  • 1 tsp cinnamon
  • 1tsp mixed spice
  • 1/2 tsp vanilla extract

METHOD

Add the raisins/sultanas and vanilla to a small bowl and cover well with water and set aside to soak.  

Pour water in a bowl then add the honey and stir until combined.  Add in the starter and mix well.  Add the flour and salt and mix to a shaggy dough.  

Cover and leave for 30 -60 mins. 

Do your first stretch and fold, pulling the dough out and folding it back onto it’s self.   Work your way around the loaf for about 12-15 folds.  Cover for half and hour. 

Drain the sultanas and put into the next stretch and folds until well combined.  Cover and leave for 15 minutes. 

Now do 2 more lots of coil folds 15- 30 mins apart, covering and leaving each time. 

After the last lot of coil folds leave with a teatowel covering in a warm space until dough has doubled in size.

Turn dough on to a rice floured surface and spread out in to a large rectangle. Sprinkle over ¾ of the spices.  Fold one side over then the other on top and add the rest of the spice.  Then roll it up from the long size in and pull into a ball towards you a few times so it’s nice and tight.  

Bench rest for 30 minutes.

Shape your dough and put it in a banneton, covered in the fridge overnight for up to 36 hours.

Pre heat oven to 250 degrees with your dutch oven in side. 

Rice flour and score your dough, and put in the over covered for 30 minutes.  Remove the lid, and keep baking for 10-12 minutes until nicely browned.  Wait 2-4 hours until slicing. Serve either fresh with butter or toasted for breaky with butter.
