This is a favourite of mine for winter and Harper loves her baby version – hardly any difference to the adult version.
Ingredients
200g diced beef (finely diced more than what they give you)
1/2 brown onion diced
1 carrot finely diced
1/2 sweet potato finely diced
1 potato finely diced
1/2 cup peas
2 bay leaves
nutmeg
cinnamon
low salt beef stock
Method
Put the beef, onion and bay leaves in a pot and cover with water and 2 teaspoons of stock. Bring to the boil then turn down and simmer. Leave for 2 hours and make sure the meat stays covered – so you may need to top it up with water every so often.
After 2 hours – add the carrot, sweet potato, potato and a dash of nutmeg and cinnamon. Leave for about an hour – stirring occasionally.
Add peas and mix in – serve and freeze.
