apple, sultana & oat muffins

A little healthy – a little naughty – but delicious all the same. Great for toddlers, kids and adults alike.

Ingredients:

1 cup self raising flour
1/2 cup rolled oats
3/4 cup brown sugar
30g sultanas
3/4 cup milk of your choice
1 egg
2 tbsp coconut oil
1 large apple diced

Method:

Pre heat a fan forced oven to 180 degree.

Mix all the dry ingredients together. In a separate bowl – mix all the wet ingredients (excluding apple). Pour the wet into the dry and mix well. Add in the apple until combined.

Pour into a lined muffin tin – and bake for 20-25 mins or until golden on top.

Eat straight out of the oven for ultimate enjoyment.
