Everyone loves a classic roast chicken recipe
Roasts can be so overwhelming but I promise you this is SO easy – throw it in the oven and it’s done. Also if you’re struggling with sandwiches fillers for lunches – you’ve just killed 2 birds with 1 stone. Dinner and lunches done – even do 2 at once – you’ve saved yourself time and money AND you’ve improved our health! #winning

Let’s make a roast chicken
I’ve popped my alternate seasoning below too – which is so yummy.
What you’ll need
- 1 x whole chicken
- 1/2 lemon
- Fresh Rosemary, thyme, sage
- Sea salt
- Olive oil
- Mix veggies – I use spud lite potatoes, sweet potatoes (gold and purple), carrot, red onion, garlic, cauliflower (white and purple) and parsnip
What you need to do
1️⃣ Chop all your vegetables and put on a baking tray, drizzle with olive oil and sea salt.
2️⃣ Pat your chicken dry with paper towel – then truss. Tying the legs up nice and tight – ensuring the wings are away from the body – this will help them crisp up a bit.
3️⃣ Pop the chicken on top of the veggies (those veggies underneath will get all the chicken goodness soaked in to them – so steal those on to your plate first)
4️⃣ Drizzle chook with olive oil and massage in sea salt/spices
5️⃣ Pre heat oven to 220 degrees and place in there for 10 minutes. Turn the heat down to 180 then cook for 20 mins per 500g of chicken (eg, 1kg chicken will take 40 mins plus the 10 at the start)
Allow to rest for 10 mins before slicing and enjoy
Serve with fresh gravy made from the juices of the chicken! Recipe coming soon.

1/2 tsp onion powder
1 tsp dried rosemary
1 tsp dried thyme
1/2 tsp sea salt
